The ancient grains are wheat varieties that have not been modified over the last 50 years in order to increase yield. The ears of wheat are more robust, nearly high twice compared to conventional varieties and therefore have a natural protection against weeds that are unable to take over; for this reason it is suitable to be grown exclusively by organic and natural methods.
