I’m Agata Barbagallo, great-grandson of the founder, welcome in the corner of the recipes! According to request of my father I have written down the recipes of pasta dishes that we like to prepare more often at home so that everyone, even those not so familiar with the Sicilian cuisine, can make an excellent lunch or dinner following simple indications; The little secrets learned through family experience make the difference that's why I added some of my personal recommendations; My grandmother Agata used to say that in cuisine, like in life, the real secret is love and passion! Just as the musician combines the individual notes searching harmony in the composition, the chef blends simple ingredients to create a fine balance that will gives unique flavor to his dish. It is therefore essential not to think about cooking as a daily task but like a small space where you can express your creativity! |

ANCHOVIES AND BREAD CRUMB This is a typical Sicilian dish, which dates back to the time when one of the most common occupations along the seaside countries was fishing. Prepared in many different ways through the island, reflects the need of the time to prepare a tasty dish with simple ingredients that were always in the homes of fishermen: bread of day before and anchovies. |

Excellent with fresh mushrooms, but also very tasty with the dried ones, is the perfect recipe to combine all the aromas of autumn on Etna with the flavor of the Sicilian pasta |

It is one of my favorite dishes, never fails in our fridge during hot summer days! It is fresh and tasty and can be kept for several days in the fridge and can be eaten cold at the last minute. This is the Mediterranean version, but you can have fun to create many other pasta salads with ingredients that you find at home |
